Rice chips and Andfjord Salmon a la TikTok

Here, chef and food influencer Finn-Erik Rognan presents a dish inspired by TikTok. He was tipped off about the combination of crispy, deep-fried rice chips and salmon by his 18-year-old daughter.

"I have to admit that I don't think every dish on TikTok is exciting, but it's fun when something really takes off. I thought this TikTok sensation with rice chips and creamy salmon looked very intriguing and decided to test it out with a delicious piece of back loin of fresh Andfjord Salmon," says Rognan. 

Rice paper chips and salmon

In this dish, Rognan uses rice paper of the type from which soft spring rolls are made. But for this recipe, the rice paper should be divided into pieces and deep-fried into crispy chips. Here, temperature plays an essential role. 

"It's extremely important that the temperature of the oil is hot enough when frying. I heat it to 180-190 degrees Celsius, which gives me crispy chips in a few seconds," says Rognan, showing how the rice paper immediately shrinks in the oil. If the oil isn't hot enough, the rice paper will become chewy instead, the chef warns. 

Andfjord Salmon: One of the world's best ingredients 

Here, Rognan makes a creamy salmon dish with delicious pieces of Andfjord Salmon, which he refers to as one of the world's best ingredients. Small cubes of salmon and rough amounts of sriracha sauce and sweet chili sauce, as well as some roe, sesame oil and salt, are added to a bowl make a cold topping for the crispy chips.  

"A lot of people wonder if the rice chips taste like anything, but the truth is that they're just there to provide the crunch. The whole taste comes from the delicious salmon and the side dishes," says Rognan.

You can use rough measurements for this dish, which is something you can make quickly before friends show up or you're going to watch TV. If you have all the ingredients ready, it only takes a few minutes," he says. 

Rognan tops the salmon mix with some greens to add some freshness, colour, and crispness. 

"Here, I use chopped chives, cucumber, red onion and some sesame seeds. See how nicely it goes with the delicious, creamy salmon," he says enthusiastically, showing off his enticing take on the popular TikTok phenomenon Rice Chips with Salmon.

  • Mayonnaise 0.25
  • Sriracha sauce  12.5 ml
  • Sweet chili sauce 12.5 ml
